It’s a warm winter evening in Cape Town so I left work craving something summery. This is what I came up with: a super healthy spin on a classic summer burger, catering especially to weird people like me who like a little sweet and savory all in one bite! Seeded bun with balsamic glazed chicken, strawberry preserves, brie, arugula, and caramelized onions. Recipe at the bottom 🙂
Strawberry, Brie & Balsamic Chicken Burgers
- Seeded or whole grain buns
- 1 vidalia onion
- A few handfuls of arugula
- 1 wheel of brie, sliced
- Strawberry preserves
- Fresh strawberries
- 4 chicken breasts
- Chicken marinade:
- 3 tbsp. EVOO
- 1/4 cup Balsamic Vinegar
- 1 tbsp. honey
- 1 tsp. of salt
- 1 tsp. of pepper
Preheat your outdoor grill (or indoor saucepan, in my case!) with some EVOO to medium-high.
In a large bowl, mix together EVOO, balsamic, salt, pepper and honey, and toss chicken around in it. Add chicken and all of the excess marinade to saucepan.
Sautee chicken breasts about 8 minutes per side or until cooked all the way through.
Meanwhile, in a large skillet over medium-high heat, caramelize the onion with some EVOO, salt and pepper.
About a minute before you pull the chicken out of the pan, add two to three thick slices of brie on top of each one and allow to melt just slightly.
Toast your buns in the oven for a minute or two if you like them crispy!
Take the chicken off the heat and build your burger: bun, arugula, chicken with brie, caramelized onions, and a dollop of strawberry preserves.
Serve immediately. No judgment if you’re suddenly overcome with a HUGE appetite and eat two burgers… oops.
My balcony is *almost* as good as my parents’ patio in DC. Almost.
Yeah, my winter walks to the grocery store back on the East Coast definitely looked like this too.
